Escarole is a form of Endive (a salad green) which is also known as Chicory. This variety has large, curled leaves and is typically used in salads. Batavian Escarole is tender, has a white interior, and can be used in soups. It is much less bitter than typical Endive varieties. Grow it just like lettuce.
